材料 Ingredients:
一百克梅頭瘦肉切幼粒100g diced pork
三十克冬菇乾,浸腍切粒 30g dried shiitake mushrooms, soaked and diced
三十克蝦米;浸腍切粒 30g dried shrimps, soaked and diced
三個馬蹄,拍鬆切粒 3 water chestnut, diced
二十克唐芹 20g Chinese celery
生粉水(兩茶匙生粉加三湯匙清水攪勻)Starch water (2tsp starch in 3tbs water)
一茶匙金華火腿碎 1tsp chopped Chinese ham
一湯匙紅蔥頭碎 1tbs chopped shallots
一湯匙薑米 1tbs chopped ginger
調味料 Condiments:
少許胡椒粉 Ground pepper powder
半茶匙五香粉 1/2tsp five spice powder
半茶匙鹽1/2tsp salt
一茶匙麻油 1tsp sesame oil
生粉水(兩茶匙生粉加三湯匙清水攪勻)Starch water (2tsp starch in 3tbs water)
一湯匙蠔油 1tbs oyster sauce
一湯匙紹興酒 1tbs Chinese rice wine
一茶匙白糖 1tsp sugar
鹹水角皮材料 Wrapper ingredients:
五十五克澄粉 55g Wheat starch
六十毫升清水60ml water
三十毫升生油 30ml cooking oil
三百克糯米粉 300g glutinous rice flour
五十克糖 55g sugar
一百二十毫升清水 120ml water
